
When @pepperexchange launched the tropical habanero sauce, I knew I needed to glaze up some bacon. Given the tropical vibes, wrapping pineapple in bacon only felt natural.
I cut the pineapple into skewers, coated it with a BBQ run. Wrapped it bacon and smoked them at around 250. Giving them a brush of the tropical habanero sauce every 20-30 minutes. After about 1.5 I bumped up the temp a bit to bring that bacon to a crisp.
I kept a slice of bacon reserved and glazed it as well to garnish my pineapple.
These were a hit, highly recommend! Playing with the combo of rub between sweet, spicy, smokey and savory totally changes the flavor profile, so have fun with this one!
