
I stayed with Yukon Gold potatoes diced into 1/4 inch diced cubes and tossed in avocado oil and @spiceology Thunder dust seasoning. Over medium high heat. With another tablespoon of avocado oil I pan fried the potato.
In a large pot of water, lightly simmering with a teaspoon of vinegar, I poached two eggs for 3.5 minutes.
The bacon is baked at 350 on a sheet pan till crispy.
Finally the gravy was leftover from swedish meatball night, but starts with a roux, and incorporates beef broth, Worcestershire sauce, Dijon, and black pepper.
With the potatoes golden and crispy, they get tossed in a bit more seasoning. The eggs are set on a paper town to dry just a touch and assembly is easy. Stack all the goodness and spoon warm gravy over the top.
