Aji Amarillo Beef JerkyThis spicy beef jerky will keep you coming back for more! @pepperexchange Aji Amarillo limited edition pepper puree is perfect for your next batch of beef jerky! Ingredients:2lb Eye of Round(1/4in slices)4oz Aji Amarillo2oz Soy Sauce2oz Worcestershire sauce8oz Bourbon Instructions: * Remove any exterior fat and slice the eye of round into thin slices, between 1/8 and 1/4 inch thick depending on your preference and place in a Ziploc bag. * Combine 2oz(half a jar) of Aji Amarillo, soy sauce, Worcestershire sauce, and bourbon. * Pour marinade into the bag and massage it into the sliced meat. * Let rest refrigerated overnight * Smoke on your smoker's lowest setting (usually about 2-3 hours) until you can bend the meat and it will show white cracks but not snap in half. Tip!! * For a bit of added heat, brush a thin layer of the Aji Amarillo onto each slice after placing it on the smoker (should use the remaining 2 oz)If any moisture remains on the surface when the jerky is done pat dry with a paper towel and store in a cool dry place for up to a week.
