Low carb chicken enchiladasPrep the chicken in advance and these come together very quickly! The chicken breast was cooked in a crock pot with enchilada sauce and then shredded and put back in the sauce. This was done the day before. One onion was sauteed till golden brown in a bit of butter and a pinch of salt. I added about half the onion to the chicken mixture as well as one can of sliced olives. This was loaded into a zero net carb tortilla that was dipped into some enchilada sauce and then also loaded with a handful of coastal cheddar cheese. The tortillas were then rolled and placed on a parchment lined tray and baked at 350 for 30 minutes. To serve I topped them with some @eatwholly avocado and Sour cream.
