A grilled chicken top salad and loaded baked potato, no snacks.
Lunch was the @yourtaylorfarms salad topped with that same grilled chicken (I also used the chicken on my potato).
The potato was rubbed lightly in olive oil and generously salted with @redmondrealsalt kosher salt. Then baked at 425 for about an hour. I topped it with some spinach parmesan dip and a diced chicken breast as well as two strips of bacon.
The chicken for both dishes was meal prepped in a big batch and used all week. I’m not out of it; using the @bearmountainbbq oak pellets to meal prep chicken for the week in the Yoder makes all these meals so easy! I finished it off with some hot sauce for good measure.
For my afternoon break, no snacks but I did have a dirty chai latte. I used the @nepalteacollective chai and brewed that per the instructions. I added that to a double shot of espresso and topped with a splash of half and half before icing it down. It’s 75+ degrees out here in San Diego, so iced was the way to go!
I also did a huge push in steps to hit that @garmin monthly steps challenge.
