Pork Belly Burnt End tacos! Dinner included one of my favorite bites in BBQ, pork belly burnt ends! I smoked these low and slow at 175 for about 6 hours before bumping up the heat to crisp up and caramelize the outside. These were smoked with @bearmountainbbq hickory and marinated in @meatchurch honey bacon BBQ rub and peach & Clementine @sanpellegrino_us Served with a slaw, @cabotcreamery cheddar cheese, some salsa and fresh avocado Lunch was two red breakfast sandwiches that I added some Swiss cheese and buffalo chicken deli meat to. Ravioli, chicken and broccoli for dinner and cottage cheese for lunch Lunch was lazy, a big ole’ serving of cottage cheese with a @builtbar for an afternoon treat. Dinner was a bowl of cheese and onion ravioli from Costco, with @raoshomemade sauce. I topped it with roasted broccoli that was seasoned with @spiceology butter toss and some @realgoodfoods chicken tenders. Finally a bit of Parmesan and it was all set. Sleep and workouts were good and steps just below goal but above 10k.

Did someone say protein?!? Lunch is 4 eggs, runny/jammy yolks which are primed for using the @simplekneads_gf sourdough for dipping. Snacks for the day were @stryvebiltong biltong, 2 @thinkjerky jalapeno sticks and a @questnutrition bar. This is what happens when you are on a single 3.5 hour meeting and hungry… Dinner was birria nachos. I had some birria in the freezer and fresh chips from @carnivalsupermarket and a side of their spicy carrots and some salsa. Morning workout was solid, slightly lower steps than my recent average but still over 10k and sleep score in point. To those that say caffeine ruins sleep. I have evidence that proves otherwise.

Seeing some results and that keeps me focused Lunch is a protein stacked omelette with 4 eggs, spinach, cotija and @cabotcreamery cheddar cheese as well as buffalo chicken deli meat. Topped with a drizzle of @kindersflavors buttery buffalo and @litehousefoods ranch. I had a slice of sourdough as well. Afternoon snack is a @questnutrition bar. Dinner is a chicken breast seasoned with @spiceology black magic rub and topped with spinach parmesan dip, served with bacon and asparagus. Dessert is Quest peanut chocolate candies. You have seen what I eat in every post. Not daily steps hitting, and a near daily workout. I loved seeing my body fat hit a new 1 year low at 20%

Indulgent Sunday. I failed to capture everything yesterday, I want to be clear that I also had a leftover enchilada for lunch, and two additional pastry treats. A cake and chocolate chip bread. Breakfast was a slice of homemade sourdough, with melted Gouda and 1/4 avocado. Then two poached eggs and two tablespoons of @terrapinridgefarms maple bacon jam. I had 3 slices of bacon on the side. I also had some additional sourdough and a protein shake. Dinner was out and I shared a sesame crusted Brie for appetizers and a salad with skirt steak and blue cheese. I also had an old fashioned. Overall a good Sunday but far more calories than normal. It happens, was enjoyable, and now I move forward.

Protein and pizza! Started my day with a Saturday morning workout and came home for a protein shake with an espresso to make a mocha. Also some fresh sourdough bread and a @builtbar to cap things off. Dinner was @thepizzastandard for pizza and cheese bread. Also had a side salad made at home. Spent the day walking around so I got the step count up a bit as well. Enjoyed watching the Aztecs win in Wyoming but still want to know what the heck was going through the officials heads with three technical fouls in 38 seconds.

Out for dinner and protein focused snacks for the day. Dinner was a chicken club, fries and I did have some tots(shared with the table and no photo). After dinner treat was the Nicks bar. Lunch/snacks was the @stryvebiltong hardboiled eggs and the lemon protein bar. Got my workout and steps in. Good last day of the month. Body fat goal is still in progress but making progress. Scale is not really changing so I suppose that means muscle development but a reminder that the scale isn’t everything.

Enchiladas for dinner. A cottage cheese and granola bowl for lunch, and some snacks. Crock pot chicken in fresh tortillas with enchilada sauce, cheese and spices, served with some rice and topped with sour cream and a few avocado slices. Lunch was a bowl of cottage cheese toped with @avi_foods_co granola Snacks were a hardboiled egg, quest bar and @simplekneads_gf cinnamon raisin bread with cottage cheese. Also a handful of @crisp.power protein pretzel Finally, let’s not lose sight of that sleep score. At least I have that nailed!

A grilled chicken top salad and loaded baked potato, no snacks. Lunch was the @yourtaylorfarms salad topped with that same grilled chicken (I also used the chicken on my potato). The potato was rubbed lightly in olive oil and generously salted with @redmondrealsalt kosher salt. Then baked at 425 for about an hour. I topped it with some spinach parmesan dip and a diced chicken breast as well as two strips of bacon. The chicken for both dishes was meal prepped in a big batch and used all week. I’m not out of it; using the @bearmountainbbq oak pellets to meal prep chicken for the week in the Yoder makes all these meals so easy! I finished it off with some hot sauce for good measure. For my afternoon break, no snacks but I did have a dirty chai latte. I used the @nepalteacollective chai and brewed that per the instructions. I added that to a double shot of espresso and topped with a splash of half and half before icing it down. It’s 75+ degrees out here in San Diego, so iced was the way to go!
