Cajun Chicken Wing Wednesday! These @butcher_box wings were air dried in the fridge, then seasoned with @neilsarap Cajun Rub before being smoked at 200 using @bearmountainbbq pecan pellets. Once cooked through I bumped the temp to 350 to crisp up the skin. When they came off the smoker I tossed them in a Cajun butter, made using two tablespoons of unsalted butter and two teaspoons of Cajun rub. They were crispy, juicy and just a little spicy.
