Burgers always hit the spotThis loaded burger was delicious. One @butcher_box beef patty and one @amylufoods patty. Grilled in the Yoder using @bearmountainbbq apple wood pellets. While they grilled down below, I had the bacon up top dripping over the burgers. Lettuce, tomato, @grillospickles pickles and a bit of mayo added some freshness and ghost pepper jack cheese rounded out all the fillings. Jalapeno popper burritoInspired by @heatstrokes_outdoor_cooking but I kept it low carb! I loaded up a keto friendly tortilla with @brandingironranch Italian herb chicken, cream cheese, mozzarella, jalapeno and bacon. Crisped up the tortillas once wrapped and served with the remaining chicken and some hot sauce for good measure. I grilled up the chicken yesterday using @bearmountainbbq apple wood pellets for a nice smoke and the grillgrates gave me a good char on the chicken. Aji Amarillo Beef JerkyThis spicy beef jerky will keep you coming back for more! @pepperexchange Aji Amarillo limited edition pepper puree is perfect for your next batch of beef jerky! Ingredients:2lb Eye of Round(1/4in slices)4oz Aji Amarillo2oz Soy Sauce2oz Worcestershire sauce8oz Bourbon Instructions: * Remove any exterior fat and slice the eye of round into thin slices, between 1/8 and 1/4 inch thick depending on your preference and place in a Ziploc bag. * Combine 2oz(half a jar) of Aji Amarillo, soy sauce, Worcestershire sauce, and bourbon. * Pour marinade into the bag and massage it into the sliced meat. * Let rest refrigerated overnight * Smoke on your smoker's lowest setting (usually about 2-3 hours) until you can bend the meat and it will show white cracks but not snap in half. Tip!! * For a bit of added heat, brush a thin layer of the Aji Amarillo onto each slice after placing it on the smoker (should use the remaining 2 oz)If any moisture remains on the surface when the jerky is done pat dry with a paper towel and store in a cool dry place for up to a week. Keto friendly Beef and BroccoliThis starts with velveting some flank steak (toss beef in baking soda for 30 min, rinse and pat dry) then seasoning the steak with @neilsarap asian rub and cooking over medium high heat in some @chosenfoods avocado oil.In a separate pan, some broccoli and carrots were seasoned and sauteed in the same way. For the sauce, I used a brown sauce recipe from @stepawayfromthecarbs swapping the fish sauce for Trader joes umami seasoning and I used @swervesweetie brown sugar. I would probably cut the sugar in half next time. Ribeye and ArtichokeSmall changes can really elevate a simple meat and veggies dinner. Here I used a @brandingironranch Chimichurri Ribeye grilled hot and fast over a direct flame. The small twist this time, chili crisp. After slicing, I spooned plenty of that chili crisp over the entire steak. This adds even more umami and a touch of heat. Served up with a steam artichoke. Grilled Salmon over garlic and herb rice with artichokeThis is not a keto dish, this was cooked for my wife, who does not eat keto. The salmon was brushed in a dill mustard and seasoned with @spiceology over easy. It was then grilled at 350 over the open flame of my Yoder Smoker using @bearmountainbbq cherry wood pellets. When the salmon was done it was topped with a touch of chili crisp for a bit of added texture and flavor, layering those flavors!The artichoke was steamed and seasoned with a no salt seasoning from Costco. Served with a side of @laterrafina tzatziki feta dip. The rice was leftover from a dinner she had made the night before and was simply warmed.
