My Game Day Feast! The chicken wings were the star of the show. Two flavors, classic buffalo and a lemon pepper wing that was tossed in @spiceology chimichurri oil and parmesan. Both were smoked using @bearmountainbbq bourbon blend pellets at 225 till they were cooked internally, then I bumped the temp to 375 to crisp them up. The cheese sauce smoked alongside the wings, and was seasoned with @neilsarap southwest AP and @herdezbrand chipotle salsa. I made some chips for dipping as well, just a @cutdacarbCut into chips, lightly oiled and salted with @redmondrealsalt And baked at 375 till crispy. NY Strip & AsparagusReverse seared Thick cut NY strip smoked with @bearmountainbbq bourbon blend pellets. The steak was seasoned with @redmondrealsalt ancient grains sea salt and @neilsarap original beef rub. After a nice long smoke I seared the steak in the bacon fat rendered while cooking the bacon and asparagus. Baked chicken and zucchiniChicken breast tossed in olive oil and @spiceology Greek freak, baked at 375 to an internal temp of 165. Cubed up and drizzled in @bravadospice serrano basil hot sauce. Zucchini tossed in oil and @spiceology purple haze, layer out on a sheet pan and sprinkled with Parmesan cheese. Smoked cheese is ready to rest5lbs of cheddar and 5 lbs of Gouda smoked using @bearmountainbbq oak pellets in my @ezsmokertubes with the @yodersmokers on but not running (fan only) for about 3 hours. Then it was set open in the fridge for two days to air out before getting brushed with olive oil and then coated in the various flavors. Lemon dill crispy skin salmonJust a quick video of the process to cook the salmon itself.Slice the skin side with slits, hallway through, and salt heavily. Press skin into an oiled and preheated pan. Crispy Skin Salmon with Sauteed Green BeansThis @lummiislandwild Salmon makes dinner a breeze. Thank you to Lummi Island Wild for sending me this amazing salmon. The individual portion size made it easy for me to cook up a single serving for myself. I defrosted the salmon and then it air dried overnight in the fridge on a wire rack to get the exterior dry. When it's time to cook, I cut slices in the skin side about halfway through the salmon and salted generously with a smoked flakey salt on both sides and in the cut slits. In a preheated pan with a nice coating of olive oil I went skin side down and let the salmon tell me when it was ready to flip. As the salmon cooks the color changes, so watching the side I could see when it changed color 2/3rds of the way up, and was ready to flip. Once flipped I added some butter to the pan, then a squeeze of fresh lemon juice. Baste with a spoon and just like that it's done!The green beans were equally straightforward. I simply diced bacon, cooked halfways then tossed in the green beans and salt lightly, tossing till the green beans start to wrinkle and the bacon is crispy. To plate I added a little fresh dill, and some extra lemon to the salmon, and some sesame seeds to the green beans.The salmon does all the work so seasoning was kept simple with just the salt! The Lummi Island salmon is so rich in flavor and good fats, it's simply incredible. Crispy Brussels and Bacon wrapped chickenThe chicken was easy, @realgoodfoods did all the work, I just had to heat it up! Loaded with cheese and simply cooked in the toaster oven. I did give it a sprinkle of @neilsarap tasty sear. The brussel sprouts were quartered, and tossed in a bit of olive oil and Tasty sear. I then topped it with a bit of diced bacon. These went on the same sheet pan as the chicken, cooking right alongside it. One pan meal! All I had to do was give it a stir every once in a while, and it was perfect. I cooked at 375 for the first 20 minutes then bumped up the temp to 400 for 30 more minutes for a nice crispy brussel and crispy bacon on the chicken.
