Grilled chicken enchiladasI posted these to my story yesterday and had a few folks ask how I made these. I started with boneless skinless chicken breasts and seasoned both sides with a mix of @tdsbrewbbq carne sutra and zesty taco rubs. While the seasoning was soaking in, I preheated the @yodersmokers to 375. Once the grill leveled out the temp I put the chicken on the grill grates over the @bearmountainbbq oak fueled fire (flames hitting the chicken for a little char). Flip the chicken to cook both sides and pull it off the grill when it hits 165. Let the chicken rest for a few minutes and then Dice up the chicken into small(ish) pieces.In a pan over medium high heat precook your tortillas and then coat the tortillas in enchilada sauce, I go with a full dunk. Roll the diced chicken(add a little of that enchilada sauce to the chicken as well) and your favorite cheese (mine is @cabotcreamery these days) into the tortilla. If you're feeling fancy, you can add some grilled onions and or olives as well. From there place the rolled tortilla on a lined cookie sheet sprayed with some avocado oil. Top with a drizzle of sauce, some shredded cheese, sauce, and more cheese. Then place into an oven or toaster oven on broil at 400(medium if your broiler has low/medium/high) till cheese is crispy. Grilled Pork Chops with Green BeansThe pork chops were seasoned with @neilsarap Gourmet Lemon pepper and then grilled using @bearmountainbbq oak wood. The green beans were sauteed in olive oil and the thin sliced garlic is tossed in and also fried till golden brown. When the Green beans come out of the pan they are sprinkled with @redmondrealsalt ancient grains sea salt and topped with feta. In the same pan as the green beans I then fried an egg using that garlic infused oil. The pork chops were cooked to 140 and rested to a finish temp of 145 before being topped with the egg and enjoyed for lunch. Breakfast Burritos have a special place in my heart.These @latortillafactory 0net carb tortillas were loaded up with scrambled eggs, @cabotcreamery cheddar cheese. Home cured bacon, @caciquefoods pork chorizo and @eatwholly avocado. I seasoned the eggs with @redmondrealsalt seasoning salt and a dash of heavy cream. The avocado was seasoned with @spiceology guac and roll. Lazy chicken ParmesanLazy because I didn't bother to make pasta. This chicken breast was pounded out to make it more even across, then dipped in an egg and heavy cream mix before getting coated in @porkpanko seasoned with @spiceology pizza seasoning. Cooked at 375, when the top got crispy I flipped it and added Parmesan, let that melt, added @raoshomemade marinara and then a few thick slices of mozzarella. Classic Bacon CheeseburgerThe burger was grilled over direct @bearmountainbbq oak flame, with the bacon dripping from above. I seasoned the burger with @tdsbrewbbq Carne Sutra rub. When the burger was almost done I topped it with @cabotcreamery cheddar cheese. To assemble I loaded the @hero burger bun with shredded romaine lettuce, sliced tomatoes, the cheeseburger, @grillospickles and my home cured pepper bacon. Wing WednesdayJamaican Wings with Ancho Masala ranchThese @butcher_box wings were tossed in a bit of @chosenfoods avocado oil and then coated in @neilsarap Jamaican Rub. They sat in this mix for about an hour before going on the top rack of the @yodersmokers at 225 for about 2 hours. When they hit 165 internal I bumped the temp to 375 and let them cook till crispy outside.To serve, I dropped a little @bravadospice ancho masala ultra hot sauce into some @litehousefoods ranch and dipped the wings in the sauce for the perfect hot and cool dipper with every bite.@bearmountainbbq oak pellets fueled the smoke and then powered that crispy high heat push. Coffee Cream Stuffed French ToastThis was my post race comfort food. It was also my excuse to have 3 'cups' of coffee. I started by making the cream filling. 2 tablespoons of cream cheese, 1/2 tsp @molinavanilla about a tsp of @swervesweetie brown sugar and about 2/3rds of a packet of @drinkvitacup genius blend instant coffee. Mix all together in a Ziploc bag till the color is a consistent coffee color. Then in a glass 8×8 dish I mixed 2 eggs, vanilla, @spiceology cinnamon and a splash of half and half. Dip the @hero white bread into the egg mix, flipping to coat and then cook on a butter griddle over medium heat. To assemble I layered the French toast and coffee cream before topping with a bit of cream and shaved @hukitchen chocolate gems and the rest of the vitacup coffee.I enjoyed a cup of coffee while making this and one more while eating it.
