Cajun Chicken Wing Wednesday! These @butcher_box wings were air dried in the fridge, then seasoned with @neilsarap Cajun Rub before being smoked at 200 using @bearmountainbbq pecan pellets. Once cooked through I bumped the temp to 350 to crisp up the skin. When they came off the smoker I tossed them in a Cajun butter, made using two tablespoons of unsalted butter and two teaspoons of Cajun rub. They were crispy, juicy and just a little spicy. Chicken Crust jalapeno, bacon, pepperoni and Spinach pizzaChicken crust is the absolute best high protein low carb pizza crust (move aside fathead dough). Dry out a can of chicken (Costco cans) in the smoker to add a great smoke flavor and get that chicken nice and dry. Then mix with the chicken 1.5oz Parmesan cheese, 1 tablespoon of almond flour and enough egg to rehydrate the chicken and pull it all together. This crust used two eggs. Form the crust on a parchment lined sheet pressing it nice and thin using a fork. The bake/smoke at 350 for another 15-20 minutes, flip and top with your favorite toppings. I went with @raoshomemade marinara, mozzarella, bacon, jalapeno, spinach and pepperoni. Finished with a little more Parmesan and baked till everything was golden and bubbly. Classic bacon cheeseburgers, elevatedLet's start with the burgers, grass fed Costco beef burgers hit with @chosenfoods avocado oil spray and @neilsarap original beef. I cooked them over @bearmountainbbq pecan wood pellets on the back side of @grillgrates . The bacon was on the top shelf dripping over the burgers as they cooked. As the burgers neared completion I topped them with a slice of jalapeno havarti cheese. The bacon is my home cured @pepperexchange chipotle bacon with just the right amount of spice and smoke. To build the burger I went with a keto friendly bun, a layer of @chosenfoods avocado oil mayo, shredded lettuce, the burger, a slice of tomato, @grillospickles slices, the bacon, some mustard and topped with that toasted bun. Thank you to @oakridgewinery for this amazing wine! When guests are coming over, a food and wine pairing is a must. I was confident this red blend would pair perfectly with some grilled chicken and then it was just a decision on how to serve up the chicken. What I decided was a lemon cream pasta, and a side salad. For my plate, I went to a no carb pasta, for the guests a more traditional pasta. The citrus and herbs in the pasta sauce, along with the smokey grilled chicken paired wonderfully with this red wine. The salad kept it fresh on this lovely summer evening and everyone enjoyed the pairing! I loved that this was a California, estate grown and women owned winery. We're spoiled in California with some of the best wines and this was right up there!
