Chicken & Waffles (chaffles)This recipe actually came together much quicker and easier than expected. It started with the chicken. I preheated the oven to 350 and then cooked two @cutdacarb wraps for 10 minutes(golden brown) then I pulled the wraps in a food processor till they were broken into small pieces. I used two wraps, and did one almost to a dust and the other a little chunkier for texture. I also blitzed some Parmesan and added it as well as a spoonful of nutritional yeast to the breading. Then I went with a fairly classic breading station, egg and half and half for the dip, then into my cut da carb breadcrumbs before going into an air fry basket. I sprayed the basket and the chicken with some avocado oil spray to prevent sticking and help with color. They are fried in the oven at 425 for 10 minutes.While the chicken was cooking I made the chaffles, 5 minutes in the @bydash mini waffle maker. The chaffle mix which makes two chaffles is 1 egg, 1 tablespoon almond flour, 1.5oz mozzarella, 1/4 teaspoon baking powder, @spiceology butter toss (about 1/2 teaspoon, measure with your heart)To assemble I added a pad of butter to each chaffle, a spoonful of @goodgoodbrand grape jelly, the crispy chicken and finally topped it with a drizzle of @birchbenders syrup. The chicken was crispy and delicious, though I should have added salt and more seasonings to the breading.
