Grilled chicken enchiladasI posted these to my story yesterday and had a few folks ask how I made these. I started with boneless skinless chicken breasts and seasoned both sides with a mix of @tdsbrewbbq carne sutra and zesty taco rubs. While the seasoning was soaking in, I preheated the @yodersmokers to 375. Once the grill leveled out the temp I put the chicken on the grill grates over the @bearmountainbbq oak fueled fire (flames hitting the chicken for a little char). Flip the chicken to cook both sides and pull it off the grill when it hits 165. Let the chicken rest for a few minutes and then Dice up the chicken into small(ish) pieces.In a pan over medium high heat precook your tortillas and then coat the tortillas in enchilada sauce, I go with a full dunk. Roll the diced chicken(add a little of that enchilada sauce to the chicken as well) and your favorite cheese (mine is @cabotcreamery these days) into the tortilla. If you're feeling fancy, you can add some grilled onions and or olives as well. From there place the rolled tortilla on a lined cookie sheet sprayed with some avocado oil. Top with a drizzle of sauce, some shredded cheese, sauce, and more cheese. Then place into an oven or toaster oven on broil at 400(medium if your broiler has low/medium/high) till cheese is crispy.
