Chocolate protein pancakes with whipped cottage cheese and a raspberry reduction

I used @carbonautbaking pancake mix as a base and added chocolate protein powder and extra egg to level up the protein. Between each layer is whipped cottage cheese. Which is simply cottage cheese tossed in a food processor and whipped till smooth.

Finally, the raspberry reduction is simply raspberries slowly cooked over low heat to break them down. I did add a tiny amount of sugar for sweetness, less than a teaspoon for a container of raspberries.

Chicken Tortilla soup to kick off cooler weather?!? I am in San Diego. So when it's below 70 I'll take the excuse to have soup!

Shredded chicken cooked in a rich chicken broth with all your favorite seasonings, tomato paste and cheese, of course more cheese on top, with some avocado and then I prefer my tortillas still a bit crunchy so I add them as I eat!

Smoked Tri-Tip Nachos

I started with smoking a tri-tip with @bearmountainbbq hickory, low and slow. This tri-tip was actually put on the smoker completely frozen! Seasoned with a carne asada rub for a bit of spice once the exterior defrosted.

The cheese sauce is equal parts Monterey and pepper jack (8oz each), 1 cup of chicken broth, one jalapeno diced and a tsp of sodium citrate.

Assembly was easy, starting with @carnivalsupermarket fresh tortilla chips, a hefty layer of cheese sauce, some diced onion, diced tomato, and loads of that smoked tri-tip. Finally i topped it with half an avocado and a touch more seasoning.

These were absolutely incredible!

Breakfast sandwich, extra protein!

I used the @redsfoods breakfast sandwich, which has egg based 'buns', turkey sausage and cheese. To that I added another egg! These low carb breakfasts are fantastic, protein forward and the calorie to protein ratio is fantastic, but I wanted that rubby egg, and a scrambled egg bun wasn't going to provide that.

Habanero Mango Smoked wings and a side of asparagus cooked with Bacon.

The wings were pre-marinated from @staterbros and simply needed a deep low and slow smoke from @bearmountainbbq pecan wood before cranking up the heat for some crispy skin.

To make the asparagus I diced up some bacon and rendered it till crispy in a saute pan. Then tossed in the asparagus to cook in the bacon fat. Seasoned with some fresh cracked black pepper and I was set.

White rice, edamame, carrots, pickled cucumber, and sauteed broccoli form the base from a sauteed chicken breast marinated in teriyaki sauce.

After dinner we headed over the Julian natural wonderfest and enjoyed some star stuffed skies.

Grilled chicken pita pockets

Grilled chicken with @bearmountainbbq pecan and seasoned with @neilsarap gourmet lemon pepper.

Pitas were toasted with a bit of hummus inside and the loaded with mixed greens, cucumber, carrot and feta.

I made a sauce with Greek yogurt, dill, oregano, lemon juice, whole grain mustard, salt and pepper.

Then loaded up the thin sliced chicken!

So good, so satiating.

I was craving a dessert the other day, still wanted some protein, and couldn't figure out what would hurt the mark. The. Unopened the pantry. Saw the chocolate Avinola and knew that was it. Perfect texture. Just the right amount of sweet and so tasty without carbs!

Chicken pinwheels

Thin cut Chicken breast rolled with Gouda cheese and spinach, and rolled with prosciutto. I seasoned the chicken with @neilsarap Mediterranean rub and smoked these at 225 using @bearmountainbbq pecan wood.

I was so happy with how they all came together, served with some roasted carrots.

To assemble these. I laid out a piece of prosciutto, then the thin chicken breast, seasoned the chicken, then a layer of spinach, a layer of cheese and then rolled tightly. I then used ones more piece of prosciutto wrapped around the whole thing to ensure a full seal around so that it would shine up nice and tight as it cooked.

Steak tacos with green onions and queso fresco.

Skirt steak grilled using @bearmountainbbq bold blend, while grilling I threw some green onion out there with them and also used fresh green onion.

Served on corn tortillas.

Simple was better here. Absolutely a less is more taco.

Black Magic Pork tenderloin and Prosciutto wrapped asparagus

Pork tenderloin rubbed in @spiceology black magic rub and smoked with @bearmountainbbq bold blend.

The asparagus was wrapped in prosciutto and smoked as well. When it came off the smoker it was dusted in Spiceology truffle parmesan.

The Pork was sliced and drizzled with @californiabalsamic hickory smoked balsamic.

Pepperoni and Bacon Cheeseburger for #nationalburgerday

This is a Costco Wagyu burger topped with pepperoni and mozzarella cheese grilled using @bearmountainbbq bold blend. I added bacon and @grillospickles and coated both the top and bottom bun with some ranch dressing.

My pro tip, cook the bacon on the shelf above the burger, so any bacon drippings get caught by the burger patty.

Tri-Tip Taco Tuesday

Shaved smoked tri-tip, queso fresco cheese, salsa Verde, shredded lettuce and green onion.

The tri-tip was smoked with @bearmountainbbq bold blend at 195 to an internal temp of 133 and rested. Then shaved thin. The meat was simply seasoned with @neilsarap
Brisket rub.

To assemble I preheated a pan and warmed the tortilla on one side, flipped it and then loaded the middle with queso fresco and shaved tri-tip, once warmed through I added the salsa, then lettuce and finally some green onions.

I had my slicer put to make some more beef jerky and figured why not shave some tri-tip for sandwiches, tacos, omelettes, etc. smoked this at 180 using @bearmountainbbq bold blend and seasoned with @neilsarap brisket rub. Internal temp of 130 and rested then shaved thin on the meat slicer.

3:30 poached eggs, homemade sourdough with a bit of unsalted butter and a nice balsamic drizzle.
