
Today is national grilled cheese day and here is how I make my grilled cheese.
Start with fresh homemade sourdough. This loaf has @cabotcreamery Vermont cheddar and fresh green onions baked into the bread.
Preheat a griddle to medium low heat and butter both sides of the bread. Make sure that when you assemble the cheese is on the correct side! Load your favorite cheeses on to each half. I went with three slices each of Cabot Vermont cheddar and pepper jack cheese. Cover with a lid, dome or bowl to help the cheese melt.
Once nice and melty; and your bread is starting to brown, add any toppings you like. I went with bacon! Normally I would add some grilled onions too but the bread had onion baked in already.
Cook a little longer to warm the bacon and then remove and assemble!
Serve with a bowl of soup for dipping and make it a meal!
