Taco Tuesday Carne Asada tacos with queso. Grilled carne asada using a direct flame courtesy of @bearmountainbbq hickory wood in the @yodersmokers ys640s. The cheese sauce is made using @tillamook cheddar. Heavy cream, green Chili's, beer and sodium citrate. All served up in street taco tortillas, kept low carb with the @missionfoodsus zero net carb tortillas. Nothing else needed for these. Korean BBQ Chicken and NoodlesThis is absolutely delicious and about as easy as it comes thanks to @kevins.natural.foods and their ready to go meals. I love a one pan meal, less dishes makes me happy. This is as simple as draining the chicken, tossing it into a pan with some oil, then I added some @miraclenoodle ready to eat spaghetti noodles, also drained. I let the chicken and noodles cook a bit, flipping over the chicken to lightly brown both sides. Then I drizzled in the sauce packet included in the Kevin's meal, coating the chicken fully and had plenty of sauce to also toss the noodles in. I dropped the heat and let that sauce thicken and then dished up! Low carb chorizo nachosThis was a lot of fun, my first time using Sodium Citrate. The cheese sauce was totally like the canned stuff but made at home with ingredients I control! I warned 1 cup of heavy cream on the stove and dissolved in a tablespoon sodium citrate (I would use less next time, or add more liquid) then with it fully integrated i slowly added in 1 lb of @tillamook sharp cheddar cheese (grated). As each handful melted in I added the next handful. I kept the cheese mix around 150 degrees through this process. Once all the cheese was mixed in I added a can of green chilies and a bit of @tdsbrewbbq zesty taco seasoning. I then bumped the heat slightly to thin the cheese out a little more (heat helps thin it). In the oven I cooked some @cutdacarb which I had sliced and sprayed with avocado oil. 375 for about 8 minutes, then turned off the oven and they sat till ready to use. The @caciquefoods pork chorizo was cooked on the stove top. Then it was time to assemble. The layer of chips, then a layer of cheese sauce, the chorizo and one final layer of cheese sauce. Kofta kebab pitasLet's start with the obvious here, I am using pita bread, which is not keto. I am playing with carbs to see if there is an impact to gym performance. Life is about experimenting to understand what drives success. With that out of the way, these Kofta kebabs were amazing. I combined ground turkey, @spiceology Greek freak, one egg, some feta cheese and some chicharone that was pulsed in a food processor to make breadcrumbs. I then pressed the meat tightly around these metal skewers and seasoned with with @neilsarap Mediterranean rub. They were then grilled directly over the @bearmountainbbq hickory fire till cooked through, rotating for a nice even char.To assemble I warmed the pita till it was soft and malleable, then loaded it with a Greek yogurt tzatziki from @hannahintlfoods before adding lettuce, tomato, red onion, cucumber, feta and a bit more tzatziki. Cobb Salad with grilled chicken breastRomaine lettuce tossed in @litehousefoodsHome style ranch for the base. The chicken was cooked using @bearmountainbbq hickory pellets and seasoned with @neilsarap southwest ap. Joining the chicken was hard boiled eggs, avocado, bacon, pepperjack cheese and diced spicy pickles. Yes, I ate a mixing bowl sized salad. While the bowl isn't full. Breakfast sandwich and egg love! I got so many positive comments on my story featuring this breakfast sandwich I had to make it more permanent as a reel.This is a @carbonautbaking bagel, some home cured bacon, and a fried egg. The bagel was topped with some Parmesan during its toast, and buttered with a chipotle maple butter. The butter was made using @pepperexchange chipotle puree, pulsed with some maple syrup and butter in a food processor. The bacon is home cured, DM me if you want to learn that process.
