Ribeye with green beans and baconA quick lunch, yes lunch, as a test cook for a photo and video shoot I am excited for over the next week or two. This is a great meal that came together in about 15 minutes (once the grill was preheated). That was a win in itself, but the goal was to understand lighting and I was able to confirm a few layouts that worked and didn't work for me. I'll be excited to do the real cook, may change the protein, may add a sauce for some color, and definitely going to shift to an evening shoot for more controlled light. I want to get the moody feel and haven't don't that style in a while. It's over due. Test cook was a @butcher_box ribeye seasoned with @neilsarap Original beef and fresh cracked pepper using my @hexclad Pepper Grinder. Cooked over direct flame with @bearmountainbbq apple wood pellets. The green beans were cooked in the bacon grease, which is a home cured pepper bacon. Again some fresh pepper. Firecracker turkey meatballs and broccoli. I have posted this recipe before, and it just hits the spot! Turkey meatballs in a sweet and spice sauce, low carb, high protein, and you can control the fats with how much butter you use with the broccoli. The sauce is @primalkitchenfoods Buffalo sauce, @swervesweetie Brown sugar, apple cider vinegar and some chili flake. Steak and Eggs BenedictThe addiction is real, so I made another one last night for dinner. We'll start at the bottom and work our way up. @carbonautbaking keto friendly bread, buttered and toasted. Fresh spinach sauteed in some leftover hollandaise (great way to stretch a bit of hollandaise and make it have an impact) Smoked flank steak leftovers, warmed up in butter. Originally smoked with @bearmountainbbqApple wood pellets. Warming it up brought out an amazing smoke aroma and absolutely flavored the butter, which I used for the toast and then sauteed the spinach in the same pan. Poached egg. White queso from Costco, and finally a bit of habanero hot sauce. What a treat! Burgers always hit the spotThis loaded burger was delicious. One @butcher_box beef patty and one @amylufoods patty. Grilled in the Yoder using @bearmountainbbq apple wood pellets. While they grilled down below, I had the bacon up top dripping over the burgers. Lettuce, tomato, @grillospickles pickles and a bit of mayo added some freshness and ghost pepper jack cheese rounded out all the fillings. Jalapeno popper burritoInspired by @heatstrokes_outdoor_cooking but I kept it low carb! I loaded up a keto friendly tortilla with @brandingironranch Italian herb chicken, cream cheese, mozzarella, jalapeno and bacon. Crisped up the tortillas once wrapped and served with the remaining chicken and some hot sauce for good measure. I grilled up the chicken yesterday using @bearmountainbbq apple wood pellets for a nice smoke and the grillgrates gave me a good char on the chicken. Aji Amarillo Beef JerkyThis spicy beef jerky will keep you coming back for more! @pepperexchange Aji Amarillo limited edition pepper puree is perfect for your next batch of beef jerky! Ingredients:2lb Eye of Round(1/4in slices)4oz Aji Amarillo2oz Soy Sauce2oz Worcestershire sauce8oz Bourbon Instructions: * Remove any exterior fat and slice the eye of round into thin slices, between 1/8 and 1/4 inch thick depending on your preference and place in a Ziploc bag. * Combine 2oz(half a jar) of Aji Amarillo, soy sauce, Worcestershire sauce, and bourbon. * Pour marinade into the bag and massage it into the sliced meat. * Let rest refrigerated overnight * Smoke on your smoker's lowest setting (usually about 2-3 hours) until you can bend the meat and it will show white cracks but not snap in half. Tip!! * For a bit of added heat, brush a thin layer of the Aji Amarillo onto each slice after placing it on the smoker (should use the remaining 2 oz)If any moisture remains on the surface when the jerky is done pat dry with a paper towel and store in a cool dry place for up to a week. Keto friendly Beef and BroccoliThis starts with velveting some flank steak (toss beef in baking soda for 30 min, rinse and pat dry) then seasoning the steak with @neilsarap asian rub and cooking over medium high heat in some @chosenfoods avocado oil.In a separate pan, some broccoli and carrots were seasoned and sauteed in the same way. For the sauce, I used a brown sauce recipe from @stepawayfromthecarbs swapping the fish sauce for Trader joes umami seasoning and I used @swervesweetie brown sugar. I would probably cut the sugar in half next time.
