Steak and EggsThis dish starts with a smoked NY strip, seasoned with @neilsarap Southwest Beef rub and smoked with @bearmountainbbq bourbon blend. Once smoked to 115 internal it was seared over high heat in @chosenfoods avocado oil in my @hexclad pan. While the steak rested I fried an egg in the same pan followed by warming up some of the consume and birria I created the day prior. With the steak properly rested, I sliced it up and served it in a bowl, topping the steak with a bit of birria and letting it soak in all of the delicious consume.
