Tri top salad and smoked Spinach Parmesan topped chicken breast
For lunch I made an amazing salad. I started with a @yourtaylorfarms salad kit from Costco, buffalo ranch (I skipped using the tortilla crisps). I topped the salad with thin sliced smoked tri tip. The tri tip was smoked low and slow with @bearmountainbbq pecan wood and seasoned with @kosmosq Texas beef and cow cover rubs. When the tri tip hit 135 I pulled it and let it rest 10 minutes before refrigerating it overnight and then slicing thin with a meat slicer.
Dinner was a chicken breast seasoned with @boarsnightout white rub and also smoked using pecan to 150 internal. It was the topped with spinach Parmesan dip and baked at 400 with a quick final broil to finish it off.
Served alongside bacon wrapped asparagus with a bit of @spiceology truffle Parmesan dust and a zucchini sourdough discard muffin.
